Coconut and Lemon Grass Ice Cream

I found a few recipes for coconut and lemon grass sorbet and ice cream, but I wanted something sweet but sugar free and with texture.

conut & Lemon Grass Ice Cream (version 1)
2 can of coconut milk
1/2 cup agave syrup (more or less to taste)
5 stalks of lemon grass, chopped
1 cup unsweetened shredded coconut

Heat coconut milk with chopped lemon grass until boiling. Add agave nectar. Let it boil for 2 minutes then let it cool to room temp. Strain out lemon grass. Add shredded coconut. Stir. Pour into ice cream maker and follow maker instructions.

1 can of coconut milk
1 package of coconut milk powder
8 oz plain soy milk
1/2 cup agave syrup (more or less to taste)
3 stalks of lemon grass, chopped
1 cup unsweetened shredded coconut (optional)

Heat coconut milk with chopped lemon grass until boiling. Add agave nectar. Let it boil for 2 minutes then let it cool to room temp. Strain out lemon grass. Add shredded coconut. Stir. Pour into ice cream maker and follow maker instructions.


Very very tasty.

I was trying to decide whether or not to buy an icecream maker last summer. One of the big qusetions I had was if you could make sugar free ice cream. Tell me, is your ice cream maker something that you use because you have it around, or is it really something worth having. Also there's quite a variety out there. Any comments on the different kinds?

It was the first wedding gift I got. I used it once then never agaiin until I started this project. Now, I use it alot. You can make sugar free Ice cream. You can use maple syrup, agave syrup or honey (meh) instead. I'll mail you some agave syrup if you want. It is good stuff, sweeter than sugar and doesn't make the kids go nutso. I've stopped feeding my kid th amazing amount of sugar I used to, BTW.

I'm going to check and see if I can find Agave syrup tomorrow. If the supermarket doesn't have it, the health food store might. I love the unusual ice cream flavors you've got on here, I totally want to try some when the weather is nicer.
BTW- did you notice any difference in the kids when you removed the sugar? I keep reading new debates on it. People keep telling me these days that it doesn't make any difference, but I think that mine are more hyper and cranky on sugar.
